Farming Organically Since the 50s
Bio Gemüse Wimmer is one of the oldest organic farms in Austria and certainly the oldest in the Upper Austrian region. Organic farming in Pucking, Austria, has been practiced here since the 1950s when Raimund Wimmer, the proprietor's father, delivered fresh organic produce to Linz General Hospital. We continue to use those organic methods and to acquire new skills. Our farm produces fish, vegetables, herbs, eggs, liquors and cut flowers, all organically grown, certified and destined for our restaurant in Salzburg, the Eulenspiegel, or the local farmer's market. Located opposite Mozart's birthhouse, the Eulenspiegel is the most original restaurant in Austria. At Bio Gemüse Wimmer, 'organic' is not just a certification, it is our philosophy.
FRESH ORGANIC PRODUCE FOR SALE
We farm a variety of fish including carp, burbot, sturgeon and tench that benefit from a fresh supply of spring water. However, our main speciality is organic char. Char is closely related to but is by far more refined than trout. Fish can be purchased on the farm in Pucking or at our restaurant, zum Eulenspiegel in Salzburg. It is always best to make a booking in advance.
VEGETABLES, FRUITS AND NUTS
Bio Gemüse Wimmer organic vegetables have been delivered to Linz General Hospital since the 1950. Today, we continue to grow all sorts of vegetables and fruits, most of which are destined for the restaurant. We offer a variety of salad leafs, an assortment of tomatoes and other seasonal fruits and vegetables.
HERBS AND CUT FLOWERS
We grow all sorts of culinary herbs like thyme, rosemary, sage and lovage and recently branched into medicinal herbs. In total we have over 200 varies of herbs. A photobook of our herbs is available here. We also have an assortment of flowers including over 120 David Austin rose shrubs.
BOOK A TOUR
From March to November, Bio Gemüse Wimmer opens its doors for tours for the public to learn more about organic farming. Come and feed the animals, plant seeds, stroll through the farm and sample seasonal fruits and homemade herbal teas before enjoying a hearty lunch with our home brewed liquors.
